Wild Duck


4 whole ducks, dressed
Cajun seasoning
4 onions, chopped
4 stalks celery, chopped
1 bell pepper, chopped
1 cup bacon drippings
1 cup Burgundy wine
2 – 10 ½ oz. cans chicken broth
½ cup chopped green onions
½ cup chopped parsley
1 – 8 oz. can mushrooms


Season ducks inside and out generously with Cajun seasoning.

Mix onions, celery, and bell pepper in bowl. Stuff equal amount in each duck.

Place ducks in Dutch oven on top of stove. Add bacon drippings and brown ducks all over. Add wine, chicken broth, and enough water to cover ducks. Bring to a boil. Reduce heat to simmer and cook until tender. Remove ducks from pot.

To pot add green onions, parsley, mushrooms, and mushroom juice thickened with a little flour. Cook 5 minutes. Add water if more gravy is needed .
