Venison Bake


2-3 tbsp. oil
5-6 lbs. venison, cubed
5 lbs.  white onions, chopped
1 clove garlic, chopped
Salt and pepper to taste
Cajun seasoning to taste
2-3 bay leaves
2 8-oz. cans sliced mushrooms


Season meat with salt, pepper, and Cajun seasoning. In Dutch oven, heat oil and add meat. Cook over medium-high heat until browned, stirring often. Stir in onions and garlic. Continue cooking until wilted. Transfer to a large oven roaster.

Add mushrooms and bay leaves. Cover.

Bake at 325 degrees F for 3-4 hours.

Serve over rice.
