Tomato Preserves


2 ¼ lbs. tomatoes (3 cups prepared tomatoes)
4 ½ cups sugar
¼ cup lemon juice
1 ½ teaspoons grated lemon peel
1 box fruit pectin


Scald, peel, and chop tomatoes.

In large saucepan, add tomatoes, sugar, lemon juice, and lemon peel. Cook to boiling. Add fruit pectin. Return to a boil that cannot be stirred down. Cook for 1 minute.

Skim off foam. Pour into hot, clean jars. Seal and let cool.
