Tomato Basil Soup with Crabmeat


1 tablespoon butter
1/2 cup finely chopped onion
1-8 oz. can tomato sauce with roasted garlic
1 cup half-and-half
1 cup coarsely chopped cooked crab meat
1/2 cup chicken broth
1/4 cup chopped fresh basil leaves or 1 teaspoon dried
1/4 teaspoon salt
1/8 teaspoon ground black pepper


Melt butter in a medium saucepan over medium-high heat. Add onion and cook until tender, stirring frequently.

Add remaining ingredients.  

NOTE:  If using crab meat from a crab boil, you may not need added salt and pepper.

Bring just to a boil; reduce heat to low. Cover tightly and simmer 5 minutes. 

Sprinkle with basil before serving.
