Sweet Potatoes Croquettes

INGREDIENTS:

2 cups mashed sweet potatoes
1 egg yolk
1 teaspoon minced parsley
2 tablespoons butter
Salt and paprika
½ teaspoon onion juice
1 egg, beaten
Bread crumbs
Oil for frying

DIRECTIONS:

Combine potatoes with butter, egg yolk, parsley, salt, paprika and onion juice.

Form into croquettes, either round or oblong. Dip into egg, then into bread crumbs. Fry until golden brown.
