Sweet Potato Custard Pie

INGREDIENTS:

Pastry:

1 ½ cups flour
½ cup shortening
About ½ cup cold water
½ teaspoon salt

 

Custard:

2 cups mashed sweet potatoes
1 cup whole milk
3 eggs
½ cup sugar
2 tablespoons melted butter
1 teaspoon salt
6 tablespoons sugar
Nutmeg, if desired

DIRECTIONS:

Pastry:
Thoroughly mix flour, shortening, and salt. Add just enough water to hold the particles together. Toss on board and roll thin. Arrange pastry in pie pan.

Custard:
Beat egg yolks into cooked mashed potatoes. Add melted butter, and then milk, ½ cup sugar, and salt.

Pour into pie pan. Bake at 350 degrees until pie is set.

Make a stiff meringue of the egg whites and 6 tablespoons sugar. Spread over the top of pie and bake until a delicate brown .
