Sweet Potato Crunch


3 large sweet potatoes
4 tbsp. butter
2 eggs
1/3 cup evaporated milk
1 tsp. vanilla
1/2 cup brown sugar

1/3 cup butter, melted and cooled
1 cup light brown sugar
1/2 cup flour
1 cup chopped pecans


Bake sweet potatoes at 350 degrees F until tender (approximately 45 minutes to 1 hour). Remove outer skin and mash.

Combine sweet potatoes, butter, eggs, evaporated milk, vanilla and brown sugar together with a mixer. Put into baking dish.

Mix topping ingredients together and spread over sweet potatoes. Bake at 350 degrees F about 15-20 minutes.
