Susan's Sweet Peas

INGREDIENTS:


2 tbsp. oil
2 tbsp. flour
3 tbsp. chopped onions
15 oz. can Lesueur Very Young Small Sweet Peas
Salt and pepper to taste

DIRECTIONS:

In small saucepan, make a medium brown roux with 2 tbsp. oil and 2 tbsp. flour. Add onions and cook until wilted. Add peas, salt and pepper to taste, and simmer 15 to 30 minutes. You can add water during cooking, but roux should make sauce a little thick.
