Susan's Shrimp Stew


1/3 cup flour
1/3 cup oil
2 cups onions, chopped
1/2 cup green pepper, chopped
1/2 cup green onions, chopped
1/2 cup parsley, minced
2 cups celery, chopped
3 cups Louisiana shrimp
Salt and pepper to taste


Make a medium-colored roux with the flour and oil. Saute onions and green pepper until tender. Add green onions, parsley, celery and shrimp. Add salt and pepper to taste. Add water as necessary. Cook about 1 hour, adding water as necessary.

Serve over rice.
