Susan's Seafood Gumbo

3/4 cup oil
3/4 cup flour
1 large onion, chopped
1 lb. okra, sliced
1 lb. peeled and deveined Louisiana shrimp
Cajun seasoning
1 lb. crabmeat
Salt and pepper to taste


Make a roux with the oil and flour in heavy-bottomed pot over medium heat. Add onions and cook until translucent. Add okra and cook down. Keep an eye on the pot and stir often to keep mixture from sticking. You may have to add a little water to prevent sticking.

Add shrimp which have been seasoned with Cajun seasoning to taste. Cook shrimp until pink. Add water and bring to a boil. Lower heat and simmer about 1 hour. Add Cajun seasoning, salt and pepper to taste. Add crabmeat in last 1/2 hour of cooking time.
