Stuffed Red Snapper


1 ½ cups chopped onions
½ cup chopped celery
1 stick butter
½ teaspoon sugar
1 teaspoon salt
½ teaspoon cayenne
½ cup bread crumbs
¼ teaspoon black pepper
4 lbs. red snapper filet
1 lb. shrimp, peeled and deveined
6 slices of stale bread
4 eggs
1 heaping tablespoon flour


Chop shrimp – not too fine.

Dice 1 lb. of fish and set aside.

In cast iron pot, wilt onions and celery in butter. Add sugar, black pepper and salt. Add shrimp and diced fish to mixture. Cook for 5 minutes.

Put bread and eggs in a bowl. Mix well. Add flour and bread crumbs. When well mixed, add shrimp/fish mixture. Stir well.

Stuff filets with mixture. Season and butter each side of filet and broil in oven 10 minutes to each side.

Serve hot with garlic butter .
