Squash Cake

3 medium scalloped squash
1/2 can sweetened condensed milk
2 eggs
1 cup sugar
1/4 tsp. cinnamon
1 stick butter, softened
1/2 cup biscuit mix
1/2 cup crushed pineapple, or as desired
1/2 cup shredded coconut, or as desired
1 tsp. vanilla


Peel and quarter squash. Boil until tender, drain. Mash squash.

Add all ingredients. Mix well.

Bake in greased 13x9 inch pan at 400 degrees until golden brown on top (about 45 minutes). Top with whipped cream if desired.
