Spicy Raisin Cake


1-1/4 cup flour
1 cup sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. ground cloves
3/4 cup milk
1/3 cup shortening
1 egg
1-1/2 tsp. baking powder
1 cup raisins (or chopped dates)


Heat oven to 350 degrees. Mix all ingredients except raisins. Fold in raisins. Pour into a 9x13" baking pan. Bake 35 to 40 minutes.

Spicy Raisin Cake gets better with age. So bake ahead of time and store in an air-tight container.

Hint: If you don't like raisins, you can use dates. I find that if you boil raisins, they're not quite as strong flavored.

Browned Butter Frosting
3 tbsp. butter
1-1/2 cup confectioner's sugar
1/2 tsp. vanilla
1 tbsp. milk

Heat butter in saucepan until delicate brown. Mix in sugar. Add vanilla and milk. Stir until smooth and creamy. Frost cake.
