Southern-Style Chicken Pot Pie

4 cups cooked chicken, diced & seasoned with Tony’s   (Rotisserie is fine!  I’m a busy woman… I love  shortcuts!)
1/2 cup green onions
1/4 cup bell pepper
1/4 cup fresh parsley
2 cans cream of mushroom soup
6 tbsp. butter
1/4 cup grated cheddar cheese
4 unbaked pie crusts
Salt & Pepper to taste
2 pie pans
Cooking spray


Saute' seasonings in butter. Add chicken, cheese, and soup. Mix well. Season with salt & pepper. Spray pie pans with cooking spray and place one pie crust in each pan. Fill each pie crust with half of chicken mixture. Cover each with the additional 2 pie crusts, folding edges over. Vent with fork and brush with melted butter. Bake at 400 degrees for 45 minutes or until golden brown.

They freeze well! I usually cook one to eat now and freeze one for later!
