Smothered Okra

INGREDIENTS:

2 lbs. okra
2 tablespoons oil
1 tablespoon flour
1 onion, chopped
½ bell pepper, chopped
2 ribs celery, chopped
5 tomatoes, chopped
Salt and pepper to taste

DIRECTIONS:

In heavy bottomed pot, make a medium dark roux with oil and flour. Add onion, bell pepper, and celery. Cook until tender. Add okra and tomatoes. Season with salt and pepper. Smother down for about an hour .
