Smothered Corn

INGREDIENTS:

Small piece of salt meat
2 tablespoons oil
1 small onion, chopped
1 quart corn
2 tablespoons tomato sauce
Salt and pepper to taste

DIRECTIONS:

Boil small piece of salt meat in heavy pot.  Rinse and set aside.  Dry pot and add oil, meat and onions.  Cook until onions are wilted and meat is browned.

Add corn.  Cover tightly and cook over low-medium fire, stirring often. When corn starts to stick, about 1 hour, add tomato sauce.  Salt and pepper to taste.  Continue cooking about 15 minutes more.

And if you have any leftovers, try this for breakfast. Heat up some of the corn in a skillet, then add scrambled eggs and cook together. I think it’s actually better the second time around!
