Smothered Chicken

INGREDIENTS:

2 lb. chicken
½ cup oil
1 cup chopped onions
½ cup water
Salt, pepper, cayenne

DIRECTIONS:

Cut up chicken and season with salt, pepper and a little cayenne. Fry chicken in hot oil until lightly browned. Add onions, cook covered on medium heat for 5 minutes. Add water, cover pot and cook over medium heat until tender.
