Smothered Chicken


1 – 2 lb. chicken, cut up in pieces
Salt, black pepper, and cayenne to taste
½ cup oil
1 cup chopped onions
½ cup water


Season chicken generously with salt, pepper and a little cayenne. Fry chicken in hot oil over medium heat in heavy bottomed, uncovered pot until chicken is golden brown. Add onions. Cook in covered pot over medium heat for about 5 minutes. Add water, cover pot, and let cook over medium heat until chicken is tender.
