MAKES:
3 dozen puffs

Shrimp-Stuffed Crab Puffs

INGREDIENTS:

Crab Puffs:

1 cup water
½ cup (1 stick) butter
¼ cup crabmeat
1 cup flour
1 tablespoon sugar
½ teaspoon salt
3 eggs, room temperature

 

Shrimp Stuffing:

¼ cup chopped onions
¼ cup chopped bell peppers
¼ cup crabmeat
1 cup shrimp, coarsely chopped
½ teaspoon salt
¼ teaspoon cayenne pepper
4 oz. cream cheese, softened
1 cup grated Mozzarella cheese

DIRECTIONS:

For Crab Puffs: In a saucepan, add water, butter and crabmeat. Bring to boil.

Remove from heat. Add flour, sugar and salt. Stir until mixture forms a ball.

Beat in eggs, one at a time, beating well after each addition.

Drop by teaspoonfuls onto greased baking sheet.

Bake 15 minutes in preheated 400 degree oven. Lower heat to 300 degrees and bake 10-12 minutes longer or until browned. For Shrimp Stuffing: Saute onion and bell pepper. Add crabmeat, shrimp, salt and pepper. Cook until shrimp is done. Remove from heat and let cool.

Add cream cheese and Mozzarella. Mix well.

Slice cooked puffs in half (on baking sheet). Fill each with stuffing.

To Bake: Preheat oven to 350 degrees. Bake for 10-12 minutes or until cheese is melted.
