Shrimp Jambalaya

INGREDIENTS:


1 lb. shrimp
4 cups cooked rice
8 oz. tomato sauce
1 teaspoon brown sugar
4 cloves garlic, chopped
1 cup chopped onions
1 1/2 cups water
½ cup chopped celery
½ cup chopped bell pepper
1/8 cup oil
½ cup chopped green onions
½ cup chopped parsley
Salt, black pepper and cayenne to taste or Tony’s seasoning

 

DIRECTIONS:

Heat oil in heavy-bottomed pot. Wilt onions, celery, bell pepper, and garlic. Add tomato sauce and cook for 15 minutes, stirring constantly. Add 1 ½ cups water and brown sugar. Cook, uncovered, for 40 minutes. Add seasoned shrimp, green onions, and parsley, and cook another 10 minutes.

Mix in cooked rice.
