Shrimp Fettucini

INGREDIENTS:


2 onions, chopped
1 bell pepper, chopped
2 stalks celery, chopped
1-1/2 sticks butter
2 lbs. shrimp or crawfish tails
1/2 pint (1 cup) half & half
3 cloves garlic
1 lb. Velveeta cheese
1 small can jalapeno relish
12 oz. fettucini or egg noodles, boiled
Parmesan cheese
Cajun seasoning

DIRECTIONS:

Saute onions, bell peppers, and celery in butter until soft.  

Season shrimp with Cajun seasoning, add to mixture and cook for 15 minutes.

Heat half & half in microwave for 1 minute.

Add garlic, cubed Velveeta, and jalapeno relish.  Then add half & half. 

NOTE:  Adding the cold Velveeta first and then the warmed half & half helps prevent the half & half from curdling.

Cook for 15 minutes.

Mix mixture with fettucini and put in baking dish.  Sprinkle with parmesan cheese.  

Bake at 350 degrees for 15 minutes.

NOTE:  Casserole can be made days ahead and baked before serving. Freezes well.
