Shrimp Delight


½ cup chopped green onions
½ cup chopped parsley
½ cup chopped bell pepper
1 onion, chopped
2 stalks celery, chopped
1 ½ sticks butter
1 can onion soup
1 can cream of mushroom soup
1 can Rotel tomatoes
1 ½ lbs. shrimp
2-3 teaspoons salt
2 cups rice


Sauté onions, celery, parsley, and bell pepper in butter. Add soups, tomatoes, and seasoned shrimp (with salt). Bring to a boil. Add rice. Mix well.

Put mixture in covered dish. Bake at 350 degrees for 1 hour. Stir after first 30 minutes.
