Seafood Stuffed Mirlitons

INGREDIENTS:

4 mirlitons
1 stick butter
1 onion, finely chopped
1/2 lb. peeled shrimp, chopped
1/2 lb. crabmeat
1 bunch thinly sliced green onions
1/4 cup seasoned breadcrumbs
salt and pepper to taste
additional breadcrumbs and butter for toppingĀ 

DIRECTIONS:

Preheat oven to 350 degrees F.

Split each mirliton in half and boil in salted water until just tender. Remove and discard the seed. Scoop out the mirliton flesh with a spoon, carefully preserving the shell. Reserve the mirliton flesh and shell.

Melt a stick of butter in a heavy-bottomed pot or skillet over medium heat. Add onions and saute until translucent.

Add mirliton flesh. Add shrimp and cook until just pink. Remove from heat and add crabmeat, green onions, and breadcrumbs. Season to taste.

Fill mirliton halves with stuffing. Sprinkle with breadcrumbs and top with a pat of butter.

Bake for 20 to 25 minutes.
