Sausage and Potato Stew


¼ cup oil
¼ cup flour
1 large onion, chopped
½ cup bell pepper, chopped
1 link pork sausage, sliced thin
3 or 4 large potatoes, cut in 1-inch cubes
1 cup water
Salt and pepper to taste



Heat oil and add flour. Cook until medium brown. Add onion, bell pepper, and sausage. Cook about 10 minutes. Add potatoes and water. Cook until potatoes are tender and gravy is to desired consistency.
