Red Beans and Rice


1 lb. dried red kidney beans
1/2 lb. andouille smoked sausage, sliced thinly
3 celery ribs, chopped
1 bell pepper, chopped
1 medium onion, chopped
3 cloves garlic, minced
1 tbsp. Cajun seasoning
Cooked rice


Place beans in large heavy-bottomed pot. Add warm water a couple of inches above beans. Soak 1 hour. Drain.

Saute sausage, celery, bell pepper and onion in skillet over medium-high heat 10 minutes or until sausage is browned. Add garlic and saute 1 minute. Add mixture to beans. Add Cajun seasoning and cover with water.

Bring to a boil, reduce heat to low, and simmer 1 to 1-1/2 hours or until beans are tender. Add water as necessary.

Serve over rice.

As a Cajun recipe kidney beans are used and appear in our favorite Lafayette cookbook. In New Orleans we ate red beans, a smaller bean, and that’s what Emeril, Tony Cachere, and Gwen McGee use in their recipe.
