Red Beans and Rice


2 tablespoons bacon grease or cooking oil
1 lb. pickled pork
1 large onion, chopped
1 lb. red beans
2 cloves garlic, minced
3 stalks parsley, chopped
2 bay leaves
Salt and pepper to taste


Heat oil and brown pickled pork in it. Take out pork, put aside and brown onion.

Cover beans with water in a big deep pot. Cook for about 1 hour.

Add pickled pork, onion, garlic, parsley, and bay leaves. Cover and let cook slowly for about 2 hours. Stir occasionally and add water if mixture gets too thick. Add salt and pepper to taste.

Serve over hot Louisiana rice.
