Potato & Tuna Stew

INGREDIENTS:

Flour & oil for roux
1 medium onion
2 large potatoes
1 small can tunafish

DIRECTIONS:

Make a small roux but don't let it get brown. Add chopped onion and simmer until clear. Add diced potatoes and water and cook. Don't put cover tight. Add a small can of tuna. Add salt and pepper to taste. Serve over rice.
