Potato Salad

INGREDIENTS:


5 lbs. red potatoes, cubed
5 hard-boiled eggs, chopped
1 celery rib, finely chopped
1/2 medium onion, finely chopped
1-1/2 cup mayonnaise
1/4 cup sweet pickle relish
2 tsp. mustard
salt & pepper

DIRECTIONS:

Place cubed potatoes in large pot; cover with water and about a tablespoon of salt. Bring to a boil. Reduce heat; boil about 10 minutes or until tender. Drain.

2. In a large bowl, combine all ingredients. Add salt and pepper to taste. Cover and refrigerate leftovers.
