Pot Roast and Golden Brown Potatoes

Cooking oil
Beef roast of your choice and size
Salt, pepper, garlic powder, cayenne to taste


This is very simple to prepare. Put just enough cooking oil in your cast iron pot to cover the bottom. Season your roast with salt and pepper, a little garlic powder and cayenne. Be careful with the cayenne! A little goes a long way!

Add roast to pot. Add a chopped onion. Cover and put in a 350 degree oven.

After about 30-40 minutes, stir onions, turn over roast and add a little water--1/2 cup to 1 cup. Check on roast every 30-45 minutes, adding water as needed until roast is almost tender. Depending on type of roast and size, this might take 3-4 hours. The onions and juices will make a small gravy.

Peel and cut potatoes in chunks. Salt and pepper to taste. Add to the pot and bake 20-30 minutes longer until potatoes are cooked.

Serve over hot rice.
