Pork Chop - Sausage Jambalaya


½ cup butter
1 cup chopped onions
½ cup chopped celery
½ cup chopped bell pepper
4 pork chops, cubed, discard bones
2 links smoked sausage, cut in ¼” slices, fried and grease blotted
1 10-oz. can tomatoes
1 8-oz. can tomato sauce
1 tsp. salt
1 cup water
1 cup rice
¼ cup chopped green onions
¼ cup chopped parsley


Melt butter in a heavy pot. Add onions, celery, and bell pepper. Cook until soft and translucent.

Add pork chops and sausage and cook for 10 minutes. Stir frequently.

Add tomatoes, tomato sauce, salt, and 1 cup water. Cover and cook until pork chops are tender.

Stirring constantly, add rice, green onions, and parsley. Bring to a boil, then lower heat. Stir occasionally.

Cook until liquid is absorbed and rice is tender. Turn off heat, cover pot, and let set for 15 minutes before serving.
