Pecan Pralines


1 stick butter
18 oz. evaporated milk
4 cups white or brown sugar (or a mixture of each)
1/4 cup vanilla extract
4 cups chopped pecans


Combine butter, evaporated milk and sugar in heavy pot. Bring mixture to a rolling boil on high heat. Reduce heat to medium and continue to boil, stirring constantly. When temperature reaches soft ball stage (235 degrees F), remove from heat.

Stir in vanilla and pecans. Stir until mixture thickens.

Quickly spoon onto waxed paper. Cool.

Store in air-tight container.
