Pecan Pralines


1 cup buttermilk
2 cups sugar
large pinch salt
1 teaspoon baking soda
2 teaspoons vanilla
4 tablespoons or ½ stick butter
2 cups pecans


Stir buttermilk and sugar together. Stir in baking soda and salt. Cook in heavy pot, stirring all the time until mahogany brown in color. Take off heat.

Add vanilla and butter. Beat with spoon until almost thick. Add nuts. Drop by spoonfuls on waxed paper.
