Pecan Meringue


1 egg white
1 cup brown sugar
1 teaspoon vanilla
1 teaspoon flour
1 pinch salt
2 cups finely chopped pecans


Beat egg white until stiff. Add sugar slowly. Continue beating and add vanilla, flour, and salt. Add pecans, mixing by hand.

Drop by teaspoonful on greased cookie sheet. Bake for 30 – 35 minutes at 275 degrees.
