Pear Butter


1 cup pear pulp
1/3 to 2/3 cup sugar
2 teaspoons cinnamon


Boil pears in a large pot of water until tender. Cool.

Peel and remove cores from pears. Mash fruit thoroughly with potato masher.

Measure pears into a heavy-bottomed pot. For each cup of pulp, add 1/3 to 2/3 cup sugar and 2 teaspoons of cinnamon.

Cook over very low heat for 2 or 3 hours, stirring often at the beginning and constantly as it thickens toward the end.
