Peanut Brittle


2 cups sugar
1 cup water
1 cup white Karo syrup
2 cups raw peanuts
2 tablespoons butter
2 teaspoons vanilla
2 teaspoons baking soda


Combine sugar, water, and Karo syrup in large heavy pot. Bring to a boil.

Using a candy thermometer, cook to 240 degrees. Add peanuts. Cook to 270 degrees. Add butter. Continue cooking to 300 degrees. Remove from heat.

Add vanilla. Stir well. Add baking soda. It will start to bubble. Stir about 20 times. Pour onto two large cookie sheets.

Allow to cool. Break into pieces. Store in container with tight lid.
