Oysters and Mushrooms


2 tablespoons butter
2 tablespoons flour
2 cloves of garlic, minced
3 tablespoons parsley, minced
3 tablespoons green onions, minced
1 pint oysters, well drained and coarsely chopped
1 – 8 oz. can mushrooms, well drained and coarsely chopped
1/3 cup dry sherry
Dash of cayenne


Melt butter in frying pan, add flour, and cook over medium heat until brown. Add garlic, green onions, and parsley. Cook for 5 minutes. Add oysters, mushrooms, and a dash of cayenne.

Simmer gently for 15 minutes. Stir in sherry and continue cooking another 5 minutes. Remove from heat and serve.
