Oyster Soup


1/2 cup flour
1/3 cup vegetable oil
1 cup chopped onion
3 cloves garlic, minced
1 cup chopped celery
1/2 cup chopped bell pepper
1 lb. salt meat, diced
8 cups water, divided
1/2 gallon oysters with water
1-1/2 cups shell pasta
1/2 cup chopped green onions


In a large pot add flour and oil. Cook roux until light brown in color. Add onion and cook until browned, about 10 minutes. Add garlic and cook two more minutes.

Add celery, bell pepper and salt meat. Cook until vegetables are wilted and salt meat is cooked.

Add 4 cups water and bring to a boil. Simmer for 45 minutes.

Add oysters, oyster water and 4 more cups of water. Bring to a boil and then add the pasta and green onions. Cook until pasta is done. Add seasoning to taste.
