Old-Fashioned Lemon Butter


3 lemons
3 cups sugar
3 eggs
4 tbsp. butter



Grate lemons and squeeze out juice. Mix rind and juice and set aside.

In bowl add sugar. Add eggs one at a time, beating well after each addition. Add in rind and juice. Add butter bit by bit.

Cook mixture in double boiler, stirring constantly until mixture thickens. DO NOT BOIL.

Pour into hot jars and seal. Boil 5-10 minutes.
