Molasses Loaf Cake


¼ cup sugar
5/8 cup shortening or butter
5/8 cup molasses
2 cups sifted flour
¾ teaspoon salt
¾ teaspoon baking soda
¼ teaspoon baking powder
2 eggs, beaten
½ cup milk


Cream sugar and shortening together until light and fluffy. Add molasses slowly, beating well.

Sift together flour, salt, baking soda, and baking powder. Add ½ cup to molasses mixture and mix well.

Add beaten eggs. Add remaining sifted ingredients alternatively with milk.

Bake in greased 9x5x3-inch loaf pan at 325 degrees for about 1 hour and 10 minutes.
