Mirlitons au Gratin

INGREDIENTS:

3 large mirlitons
7 tbsp. butter, divided
2 cups onion, chopped
1 tsp. minced garlic
1 tsp. salt
1 tsp. black pepper
2 cups grated Parmesan cheese
1/2 cup breadcrumbs

DIRECTIONS:

Boil mirlitons in a pot of salted water for 30 minutes. Drain and cool.

Cut mirlitons in half and scoop out pulp, being careful to leave shells intact. Mash pulp, set aside.

In a large skillet, saute onions and garlic in 5 tablespoons of butter until soft. Stir in mirliton pulp and salt and pepper. Cook 2 minutes longer.

Remove from heat. Stir in 1-1/2 cups Parmesan cheese.

Preheat oven to 350 degrees F.

Stuff filling into mirliton shells. Top with pats of butter, breadcrumbs, and 1/2 cup Parmesan cheese.

Place on baking sheet. Bake for 15 to 20 minutes or until topping is browned.
