Maria's Shrimp Gumbo

1 onion, diced
2 stalks celery, diced
2-3 tablespoons olive oil
2 lbs. shrimp
2-3 tablespoons Louisiana Cajun Gumbo Mix
1/2 cup fresh chopped parsley
Filé to taste
Salt & pepper to taste


Sauté onions and celery in olive oil until transparent.  Add shrimp and allow them to throw off their water.  Allow shrimp to cook about 5 minutes, then add about 4 cups of water and gumbo mix.  

Bring to a boil.  Add salt and pepper to taste.    

  Once it cooks down a bit, add parsley and filé.   

Super quick and easy!
