Louisiana Crab Cakes

INGREDIENTS:

2 eggs
2 tablespoons mayonnaise
1 teaspoon prepared mustard
1/3 cup minced onions
1 lb. crab meat
Cajun Seasoning
1 cup bread crumbs
Oil for frying

DIRECTIONS:

In a large bowl, blend together eggs, mayonnaise, mustard and onions. Beat well. Fold in crab meat, then add Cajun seasoning. Mix well.

Spoon out a heaping tablespoon of mixture and form into a round patty. Coat each side with bread crumbs.

Fry crab cakes in hot oil until golden brown.
