Lemon Meringue Pie


1 pie shell, baked
Juice of 3 lemons
3 eggs, separated
3 tablespoons sugar
1 teaspoon vanilla
1 – 14 oz. can condensed milk
4 teaspoons sugar


Combine lemon juice, egg yolks, 3 tablespoons sugar, vanilla, and condensed milk in a large bowl. Mix well and pour into baked pie shell.

For meringue: In small bowl, beat egg whites until thick. Add 4 teaspoons sugar gradually until stiff peaks form. Pour over pie and bake at 350 degrees for about 10 minutes or until lightly browned.

Refrigerate several hours.
