Hot Water Sponge Cake

INGREDIENTS:

1 ¼ cups sugar
1 ½ cups sifted flour
2 teaspoons baking powder
4 eggs, separated
4 tablespoons boiling water
Pinch of salt
Vanilla or lemon extract

DIRECTIONS:

Cream egg yolks and sugar together, add beaten egg whites, then flour and baking powder. Add hot water and extract and stir gently.

Bake at 325 degrees for 1 hour.
