Green Beans

Small piece of salt meat
4 tablespoons oil
1 medium onion, chopped
4 cups green beans
Salt and pepper to taste
1 medium potato, cubed


Boil the salt meat.  Throw away the water and rinse the pot and dry.  

Add oil to pot, brown salt meat, and cook onions until wilted.

 Clean beans.  Cut off ends and cut bean about 3 inches.  If beans are large, you can French cut them by slicing lengthwise.  Add to pot.

 Cover and cook for 45 minutes or just tender, adding water as needed and stirring occasionally. Salt and pepper to taste.  Add potatoes and cook until tender.  

Can serve over rice or by themselves.
