Fried Chicken


2 cups flour
1 to 2 tablespoons salt
½ to 1 tablespoon pepper
2 large eggs
½ cup evaporated milk
3 lb. chicken, cut up
Oil for frying


Combine flour, salt and pepper in large bowl. Set aside.

In shallow bowl, whisk together eggs and buttermilk. Dip chicken in egg mixture, coat well, then dredge through flour mixture.

Place chicken in large frying pan of hot oil. Cook for 15 minutes on one side. Turn chicken pieces, cover, and cook for 10 minutes on the other side. Remove lid and cook 5 minutes longer.

To test for doneness, cut a slit to the bone in one large chicken piece. If juices run clear, chicken is done.
