Fried Catfish

INGREDIENTS:

Catfish
1 cup flour
1 teaspoon salt
2 tablespoons melted butter
2 eggs, beaten
2 egg whites, stiffly beaten
Black pepper to taste
Milk
Oil for frying

DIRECTIONS:

Sift flour and salt into bowl. Stir in melted butter and eggs. Add milk until batter is smooth. Let stand in warm place for 1 hour and then fold in egg whites.

Dip fish in batter and fry until lightly golden brown.
