Eggplant Casserole

1 lb. lean ground beef
1 onion, chopped
1/2 bell pepper, chopped
1 rib celery, chopped
1 eggplant, cut in small cubes
2 cloves garlic, minced
Salt and pepper to taste
Bread crumbs


Combine all ingredients except bread crumbs in a pot and cook down for about 1/2 hour, covered, stirring occasionally. Uncover and cook out liquid about 15-20 minutes.

Put in casserole dish and bake at 350 degrees F until top is lightly browned.
