Dot's White Beans


1 lb. Camellia brand Navy (Pea) Beans or other dried white bean
1 tbsp. baking soda
Salt meat
1/3 cup vegetable oil
Medium onion
Green onion, to taste, about a handful
Parsley, to taste, about 1/2 cup
Salt and pepper to taste


Soak 1 lb. white beans in warm water and about a tablespoon baking soda for 30 to 45 minutes. Wash well and boil 10 minutes; the water will be yellow, pour water out. Rinse twice and boil again with a piece of salt meat until beans start to crack (can cover but not tight). Pour out water; rinse twice.

Now beans are ready to cook. Add water. Add about 1/3 cup vegetable oil when beans are beginning to mash plenty (about 45 minutes - 1 hour). Add water as needed. Add a medium onion. Season to taste with salt and pepper. Add green onions and parsley last.

(I usually cook 2-4 lbs. of white beans and put up in the freezer.)
