Dot's Corn Soup

INGREDIENTS:

22-25 ears corn
1/4 cup vegetable oil
8 oz. tomato sauce or 1/2 small can tomato paste
1 medium onion
Small piece of salt meat
About 3 large potatoes
Salt and pepper to taste

DIRECTIONS:

Boil salt meat. Throw out water and put 1/4 cup oil in pot. Fry salt meat until browned. Add corn and smother on low fire, stir often (approximately 1 hour). Add tomato sauce (or 1/2 can paste) and 1 chopped onion while smothering corn. After an hour, add water and boil for another hour. Add raw potatoes that have been chopped in large chunks. Cook until potatoes are done. Salt and pepper to taste.

One of my favorite dishes of my grandmother also! Making today, but using canned corn (b/c I’m lazy!) & using shrimp in place of the salt meat. Also adding a little homemade salsa to
it to spice it up a bit…and some Tony’s!

I’ll be over! Let’s see – in about 5 hours!
